Ocean Perch with Ginger Hoisin BBQ Sauce

Ingredients

  • 4 (8 ounce) Orca Bay Ocean Perch (rockfish) Fillets
  • Sauce: 3/4 cup hoisin sauce (one 8 ounce jar)
  • Sauce: 3/4 cup rice wine vinegar
  • Sauce: 1 tbsp. Chinese fermented black beans
  • Sauce: 1 tsp. minced garlic
  • Sauce: 3/4 tsp. red pepper flakes
  • Sauce: 5 unpeeled fresh ginger coins sliced 1/4 inch thick
  • Sauce: 2 star anise
  • Sauce: Grated zest from ½ orange

Instructions

For the Sauce

  • In a small saucepan, combine all the ingredients.
  • Slowly simmer for 15 minutes.
  • Remove from the heat, and strain through a mesh strainer before using.

For the Fish

  • Place the fish on a wire rack that has been sprayed with a nonstick spray.
  • Place over a sheet pan or cookie sheet.
  • Take a spoon and ladle the sauce over the fish in an even layer.
  • Cook under a preheated broiler.
  • Cook for 3-4 minutes, the fish should be browned and firm.



Serve with steamed rice and your favorite Asian style vegetable such as baby bok choy or shitake mushrooms.
