Alaskan Cod with Roasted Garlic &
Asiago Crust- Serves 4
This recipe is inspired by one of our customers Barbara, who posted this original recipe on her website: http://penguintrax.com/?p=269. We thought the recipe sounded wonderful so we followed her carefully prepared instructions and made this excellent recipe to share with all of you!
Be warned! This recipe has lots of garlic! So if you love garlic, you’ll love this dish!

Ingredients:
4 Orca
Bay Alaska Cod fillet portions, packaging removed, thawed, rinsed, and patted
dry
Peeled
cloves from 2 small heads of roasted garlic- about 4 Tbsp.
1/2 C.
grated Asiago cheese
1/2 C.
dry, unseasoned bread crumbs
Non-stick
spray or olive oil
Sea salt and
freshly ground black pepper


Instructions:
- Preheat
oven to 375oF. Spray a small
baking pan with non-stick spray, or brush liberally with olive oil.
- Place
the roasted garlic in the bowl of a food processor and process briefly to break
up the cloves. Add the cheese and
process until evenly blended with the garlic.
Add the breadcrumbs and process once more until the mixture is blended. Use
a rubber spatula to clean the sides of the bowl and process once more, very
briefly, until mixture is homogenous and moist.


- Pat
dry the cod fillets using a paper towel, then season both sides of each portion
with salt and black pepper. Pack a layer
of crust onto one side of each fillet (this will take about 2 Tbsp. crust
mixture per fillet side). Place fillets
crust down on the baking sheet; pack additional crust on the top side of each portion.


- Place
in center of preheated oven and bake for
18- 22 minutes until fish is opaque throughout and registers 145oF.
in the center. Serve immediately.

CHEF’S
NOTE: I really love Barbara’s recipe; it
is simple, packed with flavor, and has amazing plate appeal. Having some extra roasted garlic on hand, I
tried one more batch using panko breadcrumbs and a bit of paprika to facilitate
browning. I also backed off a bit on the
garlic quantity to satisfy more timid paletes.
